Enamel over steel is ideal for large stockpots, and for other large pans that will be used mostly for water-based cooking. Because of its light weight and easy cleanup, enamel over steel is also popular for cookware used while camping. The trend of non stick cookware is on the high at present times.
The usual metals used are coated with special substances in order to minimize the possibility of food sticking to the pan surface. When frying in pans without such a coating, it is necessary to use additional vegetable or animal fat to prevent sticking. The main difference in quality levels of the coatings are in the formulas of the liquid coating, the thickness of each layer and the number of layers of used.
Since microwaves are used more these days, utensils to be used with them are also designed. They are usually non metallic, made of ceramics, glass, combination of glass and ceramic and silicone.
Pots and pans comes in different shapes and sizes depending upon their utility and they have specific features to make them ideal for special cooking techniques and types of recipes.
